This is one of those desserts that looks deceptively fancy. Galettes, characterized by their free-form crusts, lend a rustic and casual air to what otherwise would be pie. There are two things you should absolutely not skip for this recipe, and those are the raw/coarse sugar (it makes the crust and pears look sparkly and festive!) and the whipped cream (duh).
