So, I’ve written about Beaufort before, but every time I return I’m reminded how amazing of a place it is. I’m so glad my parents moved there!
Over Memorial Day Weekend, Jeff and I made a quick trip to the coast for a little R&R. We spent the whole weekend cooking, walking the dogs or at the pool, and it was absolutely perfect.
Here are a few pictures from our trip:
Hank enjoyed having the back seat to himself for the trip down. (Or, over?)
This is a loquat tree in my parents’ backyard. These fruit are all over Habersham.
On our first night, we grilled flank steak and veggies for fajita salads! The dogs were hoping for a taste, but Jeff resisted their guilt-inducing gazes.
To go with the salads, we made fresh pineapple and jalapeño margaritas using my mom’s new juicer. They were SO good!
Additionally, we made pico de gallo and guacamole as toppings for the salads.
Hank and Marty (pictured here, dangling from my mom’s arm) are SO spoiled!
The next night, we made grilled fish with several fresh sides, and to drink we made cucumber, blackberry and mint spritzers with vodka!
See? Spoiled rotten.
On our last morning, we made scrambled eggs topped with our pico de gallo, potato pancakes and bacon for brunch.
It’s always sad to leave the Lowcountry and head back to real life, especially with beautiful weather like we had, but it make thoughts of our return that much sweeter!
