Avocado + Bleu Cheese Greek Yogurt Dip
Avocados seem to be so trendy right now – they’re everywhere, including on “avocado toast” which has been filling up my Twitter/instagram/Pinterest feeds like crazy. It’s like people never thought to ever smear some avocado on toast with a little S&P before…
I’m not complaining though! I LOVE avocados.
This dip is great with buffalo wings or buffalo sauce-covered things, but it’s also just good with fresh veggies or chips. The recipe is adapted from Eclectic Recipes, but I used Greek yogurt instead of sour cream, decreased the Worcestershire and a couple extra cloves of garlic. Since Greek yogurt has wayyyy fewer calories/fat than sour cream, this recipe is practically guilt-free!
- 1.5 cups Greek yogurt
- 1 whole avocado
- 1 cup crumbled bleu cheese (buy the good stuff – not the kind in a container…)
- 2-3 cloves of garlic
- 1/4 of an onion (red or white), chopped
- 1/2 tablespoon Worcestershire sauce
- 1/2 cup celery leaves (don’t skip this! it adds tons of flavor)
- 1 tablespoon lime juice
- S&P to taste
Combine all ingredients in a food processor or blender, then pulse to combine. Add S&P to taste. Serve cold with buffalo wings, fresh veggies (celery, carrots, cucumber, endive, etc.), and chips.
I love how the recipe calls for using the celery leaves. We are so often led to believe that only certain parts of vegetables are “good”, but many times this is simply not true and yummy trimmings go to waste! Let me know if you try out this dip. You definitely have to like bleu cheese, but it’s so good and another great way to use the ever-popular avocado!
